So, I was lucky enough to crash dinner at my friend’s place when she was making something super healthy & delicious. Naturally, I decided to document the entire process to share with you all. Low- carb chicken tacos are light, flavorful, and perfect for the end of summer gatherings with friends!
“Clean eating” is a great way to cut out all of the junk that slow down your system. Clean eating consists of eating fruits, veggies, lean meats, and nuts/grains. To simplify this, I usually think of clean eating as avoiding anything that is processed or doesn’t occur naturally (is there a Dorito tree? No?).
Anyone that’s tried eating clean can tell you that it feels amazing. Sure, it can be hard to say no to the bread or processed sugars but, overall, you really do feel 100% better. Usually, when I fall into a rut of eating crappy foods, it’s because I’m too busy. I may not have the time to throw an elaborate salad together so I will satisfy my hunger by running out and getting a cheeseburger. It’s horrible, I know, but it’s the truth. Continue reading
For family dinner last night I made this fantastic Buffalo Chicken Dip. I doubled the batch and it still only lasted about 20 minutes! It’s super easy to make and equally delicious.
Here’s what you need to make this divine dip:
Cream Cheese (1 8 oz block)
Buffalo Sauce, I used Franks which was pretty tasty (1/2 cup)
Canned chicken; you can make yours fresh if you want, it just depends on your preference (1 1/2 cups or more as desired)
Shredded Cheddar Cheese (3/4 cup)
Blue Cheese (to sprinkle on top of the dip at the end)
Ranch Dressing (1/2 cup)
So I’m somewhat of a dip expert. I love dip. LOOOOOVE dip. It’s a problem. My friends only ever expect me to bring my famous artichoke dip to gatherings because they are infatuated with it and this has been the arrangement for the past few years.
The only negative thing about dip? Turns out it’s not so food for you. Those artichokes are deceiving because they are covered in mayonnaise, cream cheese, pounds of regular cheese, and lies. Continue reading
Alright, I’ll just come out and say it. I have an unhealthy love for pizza. I love it. Almost every week, my friends and I have a girls date night at our favorite pizza place (with about 4 bowls of ranch for dipping).
You might be asking yourself, “What’s the problem?” Well, this unhealthy love for pizza is very problematic when you’re trying to eat better and exercise. Most of my pizza slices go straight to my rear, and I’m not a huge fan of this result.
I love blogging. It’s a depiction of all of my favorite things: food, travel, friends, etc. So obviously, I’m crazy about it. But want to know why I *really* love this site? It’s taught me how to cook. I have become a little Martha Stewart (minus the securities fraud). Continue reading
